Baked Apple Pancake

In the original recipe, which comes from a pancake house in Gatlinburg,

Tennessee, they called for using a medium golden delicious apple. I replaced

it with Macintosh, Granny Smith or other tart variety since I don't like it so

sweet. This is very filling and good.

 

Baked Apple Pancake

 

1 cup pancake mix

2/3 cup milk

2 Tbs vegetable oil

1 egg, beaten

1/4 cup butter or margarine

1/3 cup packed brown sugar

1 medium tart apple, peeled and sliced

Mape syrup

 

In a bowl combine pancake mix, milk, oil and egg. In an 8 inch ovenproof

skillet, melt butter. Stir in brown suggar and apple slices; saute until sugar

is

dissolved. Pour batter over apple mixture. Cook, uncovered, over medium

heat until bubbles form on top of pancake.

 

Bake, uncovered, at 350 for 12 to 17 minutes or until golden. Invert onto a

serving plate. Serve with maple syrup. Yield: 2 servings (or one if you are very

hungry)
