Overnight French Toast

 

 

This recipe for French toast is sooo easy and good. You prepare the dish th=

e

night before, then when you wake up you just pop it in the oven. This is a =

 

perfect dish to serve for a brunch party, or just to enjoy on a lazy weeken=

d

morning.

 

Ingredients

2 tbsp soy margarine

4-5 apples, peeled and sliced

1/4 cup tightly packed brown sugar

1 tbsp cinnamon

2 tbsp maple syrup (optional)

 

1 cup apple juice

1/2 cup soymilk

1/2 cup plain or vanilla soy yogurt

1 tsp vanilla

one loaf of crusty French bread, cut into thick slices

 

Directions

 

1. Melt the soy margarine in a 10-inch skillet. Add the apples and sautŽ un=

til

tender, but not mushy.

2. Add the brown sugar and cinnamon, and cook until the sugar melts.

3. Add the maple syrup if using and combine well until the apples are coate=

d

and glazed.

4. Remove from heat, and pour into the bottom of a glass baking dish. Let

cool.

5. Combine the remaining ingredients in a bowl.

6. Dip each slice of French bread into the apple juice and soymilk mixture =

 

until coated.

7. Layer the slices on top of the cooked apples in the baking dish.

8. If there is extra bread, tear it up into small pieces and fill in any " h=

oles " in

the bread layer of the baking dish.

9. Pour the remaining liquid over the bread in the dish.

10. Cover with plastic wrap and refrigerate overnight.

11. In the morning, bake in a 350 degree oven for 35-45 minutes, or until t=

op

is dry and brown.

 

If you cannot find plain or vanilla soy yogurt, you can increase the soymil=

k to

one cup instead.

 

I use a 9x7 baking dish for this recipe. If you use a 9x13 dish, you may ha=

ve

to increase the amount of apples and bread used.
