Guest guest Posted October 22, 2002 Report Share Posted October 22, 2002 I think the thing I like most about the salad recipes I find are the interesting combinations of " made from scratch " dressings that come with them. You can simply assemble this salad and just use bottled dressing if you wish. The toasted sesame seeds lend a pleasant texture. Sesame Spinach Salad 1 package (10 oz) fresh spinach, torn 1/2 pint cherry tomatoes, halved 1 rip avocado, peeled and sliced 1/2 lb mushrooms, sliced 2 hard cooked eggs, chopped 1/4 cup sesame seeds, toasted 1/8 cup shredded Parmesan cheese Creamy Dressing: 1 cup sour cream 1/2 cup mayonnaise 1/8 cup finely chopped onion 1 Tbs sugar 1 Tbs white vinegar 1/2 tsp salt 1/4 tsp garlic pwdr In a large salad bowl. toss the spinach, tomatoes, avocados, mushrooms, eggs and sesame seeds. Sprinkle with Parmesan cheese. In a small bowl, combine dressing ingredients; mix well. Serve with salad. Refrigerate leftovers.
