Guest guest Posted October 20, 2002 Report Share Posted October 20, 2002 I just made cole slaw and now my back hurts, so I'm sitting down for a while. I like cole slaw the way I do it. It's vegan, btw. I don't like mayonnaise, so I use an oil/vinegar dressing on cole slaw. I use my food processor for this, but before I had one, I used a four-sided hand grater. Much easier with the food processor - it still makes a mess though. I manage to make a major mess, it seems, every time I do it. Anyway: * Shred cabbage, carrots, green pepper. I use the shredding blade for the carrots, and the fine slicing blade for the cabbage and green peppers. * Add a (drained) can of crushed pineapple if you have it. * Mix it all up - I use my hands for this. You want the mix to be very roughly 60% cabbage and 40% other stuff - or however you think you'll like it best. * Make dressing: I use a 50/50 mix of canola oil and cider vinegar for this. Today, I used 1/2 cup of oil and 1/2 cup of vinegar. I added about a teaspoon of honey, and about half a teaspoon of cumin. I mixed the dressing in a large Pyrex measuring cup, and then stuck my stick blender in the cup, to whir it all up. Sometimes I just use a whisk to mix it. * Then pour the dressing over the slaw, and toss it (I use spoons now that it has the dressing on it). It will keep nicely for several days in the fridge and gives you something green and fresh to eat when lettuce is so expensive (and lousy) in the stores in winter. Pat -- Pat Meadows Books, books!
