I usually try to give the crackers and dip, or veggies and fruit to snack on, but once in a while I splurge and fix them a pan of brownies or chocolate chip cookies. This recipe is wonderful so you can always have a brownie mix on hand to whip up a quick batch. The house smells so good, too. Mmmmmmm After School Brownie Mix 6 cups flour 4 tsp baking pwdr 4 tsp salt 8 cups sugar 1 can (8oz) baking cocoa 2 cups shortening In a large bowl, combine first five ingredients. With a pastry blender, cut in shortening until evenly distributed. Store in a large air tight container in cupboard. Keeps 10-12 weeks. Yield: about 17 cups of mix. To make brownies: 2 1/2 cups brownie mix 2 eggs, beaten 1 tsp vanilla extract nuts optional In a mixing bowl, combine first three ingredients. Beat with a spoon until smooth. Fold in chopped nuts or chocolate chips if desired. Spread into a greased 8 inch square baking pan. Bake at 350 for 20-25 minutes or until top tests done.
