Guest guest Posted October 16, 2002 Report Share Posted October 16, 2002 I got this recipe off the Peta website...Its very good but I've added MUCH more spice and now its fabulous. I'm giving you the modified recipe... 3 Tb vegetable oil 1 lb tofu, mashed 2 large sweet onions, diced 1 green bell pepper, diced minced garlic to taste 6 heaping Tbs chili powder 3 heaping Tbs ground cumin salt and pepper to taste 1 tsp cayenne pepper 1 14 oz can tomato sauce 2 28 oz cans peeled tomatoes, with liquid 52 oz red kidney beans, drained and rinsed 3 Tbs sugar ***NOTE - I used whole tomatoes the first time but have since used diced (or petite diced) and like it much better. Heat the oil in large pot over med heat. Saute the tofu for 3 minutes; add onions, bell, garlic, chili powder, salt, pepper, cayenne, and cumin. Cook until veggies are tender. Add tomatoes, tomato sauce, beans and sugar. Simmer for about an hour. Serve with crackers or cornbread...Or whatever the heck you feel like eating with chili. It's the cayenne that heats the meal up:) Chili powder just has a really good flavor. But, I eat jalepenos daily so what do I know?
