Guest guest Posted October 16, 2002 Report Share Posted October 16, 2002 I cut the ranch dressing mix to one package and I used colby-jack and cheddar cheese, but it was very good. Not diet food, but good for one of those days when you need comfort food. Ranch Mac and Cheese 1 cup milk 1/4 cup butter or margarine 2 envelopes ranch salad dressing mix 1 tsp lemon-pepper seasoning 1 tsp garlic salt 1 tsp pepper 1 cup cubed Colby cheese 1 cup Monterey Jack cheese 1 cup sour cream 1/2 cup crushed saltine crackers (about 15) 1 lb elbow macaroni, cooked and drained grated Parmesan cheese In a dutch oven, combine the milk, butter, salad dressing mix, lemon pepper, garlic salt, Colby and Monterey Jack cheese. Cook and stir over medium heat until cheese is melted and mixture begins to thicken. Fold in sour cream. Add cracker crumbs and macaroni. Cook until heated through, stirring frequently.
