Cheers, Pat * Exported from MasterCook * Pumpkin Tofu Cheesecake Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound tofu (silken tofu, if possible) 1 15 oz pumpkin, canned 4 ounces nonfat cream cheese 3/4 cup sugar 1 teaspoon vanilla 3/4 teaspoon cinnamon 1/3 teaspoon nutmeg 1/2 teaspoon ginger 1/4 teaspoon cloves, ground Preheat oven to 350 F. Coat 8.5 inch springform pan with cooking spray. Put all ingredients in food processor and process until very very smooth. Pour into pan and bake about 45 minutes Turn oven off. Let cheesecake cool in oven for 45 mintues. Transfer to wire rack and cool completely. Refrigerate, covered loosely with plastic wrap, overnight or all day. It's best if made the day before and refrigerated overnight.
