Artichoke feta lasagna

Okay, at last...

Sorry this has taken so long:) It was my son's 4th

birthday this weekend in addition to many other things

and I've been a wee bit busy.

P.T.- here is the recipe ---

 

I got this recipe off of a veggie recipe site and

added a few of my own touches. It was VERY good. By

far my hubby's favorite...And he loves his Italian

sausage.

 

9 lasagna noodles

1 onion, chopped

4 cloves garlic, chopped

1 (14.5 oz) can vegetable broth

2 Tb chopped fresh basil

1 (14 oz) jar marinated artichoke hearts, drained and

chopped

4 hearts of palm, chopped

a handful of garlic (or jalepeno) stuffed olives,

diced--(or however many you want...its a personal

taste and you can definitely go without)

10 oz frozen spinach

28 oz tomato pasta sauce

3 cups shredded mozzarella cheese, divided

1 4 oz package herb and garlic feta, crumbled

 

Preheat oven to 350

coat 13x9 dish w/cooking spray

Cook noodles and set aside

Saute onion and garlic for 3 minutes or until onion is

tender crisp. Stir in broth and herb, bring to boil.

Stir in artichoke, palm and spinach; reduce heat and

simmer 5 minutes. Stir in pasta sauce

Spread 1/4 of artichoke mixture on bottom of dish, top

with 3 noodles, sprinkle 3/4 cup cheese over noodles.

Repeat layers 2 more times ending up with artichoke

mixture and cheese on top. Sprinkle feta and olives

on top. Bake, covered for 40 minutes. Uncover and

bake 15 minutes.
