Guest guest
These are very good for breakfast on those morning when you have a bit more time to fix something. I like to eat mine with a syrup I make from combining maple syrup, honey, and some ground ginger. Mmmmmm Oat Pancakes 1 cup quick cooking oats 1 cup flour 2 Tbs sugar 2 tsp baking pwdr 1 tsp salt 2 eggs, lightly beaten 1 1/2 cups milk 1/4 cup vegetable oil 1 tsp lemon juice In a mixing bowl, combine oats, flour, sugar, baking powder, and salt. Make a well in the center. Combine eggs, milk, oil, and lemon juice; pour into well and stir until just moistened. Pour batter by 1/4 cupfuls onto hot griddle; turn when bubbles form on top of pancake. Cook until second side is golden brown. Yield: 12 pancakes. ~ P_T ~
