In the more " intense " recipe, I will layer the items more and also add some skim riccota cheese mixed with an egg for a binder. Also I often add some chopped spinach, minced capers, and more garlic; never have enough garlic. *lol* But this baked ziti recipe has served me well when I am without all of the items in my pantry and pressed for time. Easy Baked Ziti 1 medium onion, chopped 2 garlic cloves, minced 2 Tbs olive oil 1 can (28 oz) diced tomatoes, undrained 1 tsp dried oregano 1 tsp dried basil 1/2 tsp salt 1/8 tsp pepper 8 oz. ziti, cooked and drained 2 cups shredded mozzarella cheese 2 Tbs grated Parmesan cheese In a large skillet, saute the onion and garlic in the olive oil until tender. Add the tomatoes, oregano, basil, salt and pepper. Cover and simmer for 20 minutes. Place the ziti in an ungreased 11in. x 7in. x 2in. baking dish. Cover with sauce. Bake uncovered at 350 degrees for 20 minutes. Sprinkle with cheeses. Bale 10 minutes longer or until cheese melts.
