Guest guest
This past weekend my husband took my son on a camping trip. The adults were assigned different menu items and he wanted to make a dessert he could easily fix on the propane BBQ grill. (Fires weren't allowed since it is still dry here and the forest fire threat is high). I fixed the dough mix up and sent it in a zip-lock baggy with directions for mixing it with milk. And added another baggy with the cornstarch for the thickening of the fruit mixture. I got so many comments from the adults who went on the campout; they all wanted the recipe as it came out perfect. I guess I am going to have to fix some for myself so I can see what it was like. BBQ Cherry-Pineapple Cobbler 1 can cherry pie filling 1 can crushed pineapple 2 Tbs cornstarch Mix this together in a dutch oven and heat through until it bubbles and gets thick. 6 Tbs butter or margarine 2 cups flour 2 Tbs sugar 3 tsp baking pwdr 1 tsp salt 1 cup milk Mix together the flour, sugar, baking powder, and salt. Cut the butter in using a fork or pastry cutter, until the texture is coarse crumbs. Stir in one cup of milk until just blended and moist. Drop on top of bubbling fruit in 12 equal dollops. Cover and cook for 30 minutes or until toothpick inserted into biscuit comes out clean. Serves 12. ~ P_T ~
