These are very pretty, and a wonderful sidedish to serve on St Patricks Day. I

like them anytime though; even like to eat them cold the next day. *lol*

 

Irish Herbed Potatoes

 

2-1/2 lbs potatoes, peeled and cut into wedges

1/2 cup butter, melted

1 Tbs lemon juice

1/4 cup chopped fresh parsley

3 Tbs chopped fresh chives or dried chives

3 Tbs chopped fresh dill weed or 3 tsp dried dill weed

1/8 tsp salt

1/8 tsp pepper

 

In a saucepan, cook potatoes in boiling salted water until tender; drain.

Combine remaining ingredients; pour over potatoes and toss to coat. Serve

immediately. Yield: 8-10 servings
