Guest guest
I can say several things about this recipe. Yes, it is very good, and haearty as the title suggests. I fixed it one night for my family last winter when I wanted to try a different recipe and had all the ingredients in my pantry. However, when I make it again, I will likely cook it one day, then serve it the following day. The re-heated soup was way better than the soup I served the day I made it. The flavors just don't seem to have time to mingle in this recipe as is. Don't get me wrong, it is good. But it is better day-old. Hearty Potato Soup 6 medium potatoes, peeled and sliced 2 medium carrots, diced 6 celery ribs, diced 2 quarts water 1 medium onion, chopped 6 Tbs butter 6 Tbs flour 1 tsp salt 1/2 tsp pepper 1/2 cup milk In a large soup kettle or dutch oven, cook potatoes, carrots, and celery in water until tender; about 20 minutes. Drain, reserving liquid and setting vegetables aside. In the same kettle, saute onion in butter until tender. Stir in flour, salt, and pepper; gradually add milk, stirring constantly until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved liquid until soup is the desired consistency. Yield: 8-10 servings ~ P_T ~ Nature never did betray the heart that loved her. -William Wordsworth (1770-1850)
