Guest guest Posted October 2, 2002 Report Share Posted October 2, 2002 This morning I woke up wanting some fresh baked muffins. I found a recipe for bran muffins in a cookbook, and tweeked it a bit. They are so good that even my daughter asked why I haven't made these before. Bran Muffins 1-1/4 cup flour 1 Tbs baking pwdr 1/3 cup sugar ~ I used sucinot: a healthfood sugar alternative 1/2 tsp salt 1 tsp ground cinnamon 1 cup bran flakes 1 cup milk 1 egg 1/4 cup oil 10 pitted prunes, chopped in small pieces Combine bran cereal and milk in a bowl and set aside to get mushy. meanwheil, combine flour, baking powder, salt, cinnamon, and sugar of your choice in a bowl. Spray 12 muffin cups with non-stick spray. Beat the egg and oil and add to the cereal and milk mixture. Pour into flour mixture and stir until just combined, then fold in prune pieces. Divide between the 12 prepared muffin cups.
