Everything in moderation.... Confetti Scalloped Potatoes 1/2 cup butter or margarine 1/2 cup chopped onion 1 package (16oz) frozen hash brown potatoes 1 can (10-3/4oz) condensed cream of mushroom soup, undiluted 1 soup can milk 1 cup shredded cheddar cheese 1 small green pepper, cut into strips 2 Tbs chopped pimentos pepper to taste 1 cup cheese cracker crumbs, divided In a skillet, melt butter over medium heat. Saute onion until tender. Stir in potatoes, milk, and soup. Add cheese, green pepper, pimentos, pepper, and 1/2 of the cracker crumbs. Pour into a shallow casserole; top with remaining crumbs. Bake at 375 for 35-40 minutes.
