Guest guest
These are bit time intensive for me. I have only made them once, and around the holidays for a special treat. They are delicious though, and well worth the effort. The " yield " seems to suggest they make alot, but they go pretty fast. Chessy Sun Crisps 2 cups shredded cheddar cheese 1/2 cup grated Parmesan cheese 1/2 cup butter softened 3 Tbs water 1 cup flour 1/4 tsp salt 1 cup quick cooking oats 2/3 cup roasted salted sunflower seeds In a mixing bowl, combine the cheddar and parmesan cheese, butter and water until mixed well. Combine the flour and salt and add to the cheese mixture. Stir in the oats and the sunflower kernals. Kneead until the dough holds together. Shape into a 12 inch long roll. Cover with plastic wrap and chill for 4 hours or overnight. Allow to stand at room temperature for 10 minutes before cutting into 1/8 inch slices. Place on a greased foil lined baking sheets. Bake at 400 for 8-10 minutes or until the edges are gloden brown. Slide crackers off baking sheets to wire racks to cool. Yield: 8 dozen approx. ~ P_T ~ A misery is not to be measured from the nature of the evil, but from the temper of the sufferer. -Joseph Addison, essayist and poet (1672-1719)
