It sounds good but I havent' tried it yet. Any of you have any favorite burger recipes? I'd love to see them.... Thanks! Genie Bean and Veggie Burgers 1 - 15 oz can kidney beans, drained and rinsed 1/2 cup uncooked rolled oats 1/2 cup chopped fresh mushrooms 1/4 cup chopped onion 1 small carrot, shredded 1/2 medium red bell pepper, chopped 1 garlic clove, minced 2 tablespoons ketchup 3/4 teaspoon salt In food processor bowl with metal blade, combine all. Process with on/off pulses until coarsely chopped. DO NOT PUREE. Shape mixture into 4 patties, 1/2 inch thick. Spray broiler pan with nonstick cooking spray. Place patties on sprayed pan. Broil 4 to 6 inches from heat for 10 to 12 minutes or until patties are thoroughly heated, turning once. Serve on a bun with your favorite extras! To make a southwester burger, add 1/2 to 1 jalapeno chile, seeded and finely chopped, to the mix. I would rather regret that which I have experienced than wish I had experienced that which is past. Did I post my zucchini veggie burger recipe here? In case I didn't, here it is. The recipe calls for one zucchini and one summer squash, but of course you can use two of either. (In case anyone's British here - zucchini = courgette and summer squash = similar to courgette but yellow in color.) Pat VEGGIE BURGERS WITH ZUCCHINI 2 cloves garlic (grated) 1 onion (grated) 2 carrots (shredded) 1 small zucchini (shredded) 1 small summer squash (shredded) 2 teaspoons olive oil 1 1/2 cups rolled oats 1/4 cup shredded cheddar cheese 1 beaten egg 1 tbs soy sauce (tamari is much better!) 1 1/2 cups flour (note: this is the recipe as we found it and we immediately modified it. To our taste it was better with lots more onion. It held together better with two eggs.) -Heat garlic and onion in olive oil over low heat for 5 minutes. -Add squash, zucchini, and carrots and heat for 2 more minutes. -Remove from heat and add oats, cheese, and egg. -Add tamari. -Refrigerate for 1 hr. -Dredge patties in flour.
