I posted one earlier last week, but here is another that has a slightly different flavor with a bit of lemon juice and shredded cucumber. They are very delicious and can add a lot of versatility when used as a sandwich spread on a nicely toasted bagel. I haven't tried using the light cream cheese with this recipe, but I imagine you could do that and it would still taste wonderful. Crunchy Vegetable Spread 1 pkg (8oz) cream cheese, softened 1 Tbs lemon juice 3/4 cup finely shredded carrots 1/4 cup finely chopped celery 1/4 cup finely chopped onion 1/4 cup diced green pepper 1/4 cup shredded seeded cucumber 1/4 tsp ground pepper Assorted crackers or bread In a small bowl, beat cream cheese and lemon juice until smooth. Stir in vegetables and pepper. Serve with crackers or breads.
