This one took 1st prize in a spinach cooking competition. The only thing I altered in it was to use vegetarian bacos instead of real bacon. It is very delicious, and if you are a vegan you can omit the eggs and it will still taste good. Emily's Spinach Salad 2/3 cup vegetable oil 1/4 cup cider or red wine vinegar 2 tsp lemon juice 2 tsp soy sauce 1 tsp sugar 1 tsp ground mustard 1/2 tsp curry pwdr 1/2 tsp salt 1/2 tsp pepper 1/4 tsp garlic pwdr 1 pkg (10 oz) fresh spinach, torn 5 tbs bacos 2 hard boiled eggs, sliced In a jar with a tight-fitting lid, combine the first 10 ingredients; mix well. Set aside. Place the spinach in a large salad bowl. Just before serving, pour the dressing over the spinach and toss gently. Garnish with the bacos and the eggs slices.
