'The Girl Who Loved Tom Gordon' Salad

Back when I was reading'The Girl Who Loved Tom Gordon' book to my

children, I stumbled across a recipe for fiddlehead and shrimp salad. In this

riveting tale of a lost girl in the Maine woods by master storyteller Stephen

King, the main character, Trisha, has to eat what she can scrounge from the

wilds around her. Her mother had taught her about edible fiddleheads, and

for a time this was all she had to eat during her struggle for survival.

 

I live in Oregon, and I wasn't able to find any fiddleheads. Thankfully the

recipe did suggest you could substitute asparagus for them, and I omitted

the shrimp replacing it with some sliced waterchestnuts. I served this, to my

children's delight, one evening as I read to them from the book.

 

If you live in Maine, do try this salad with fiddleheads when they are in

season. You also might want to read this story I renamed the salad after.

 

'Girl Who Loved Tom Gordon' Salad

 

3 cupssliced fresh asparagus (or fiddleheads)

1 cup cooked shell macaroni

1/2 cup diced unpeeled apple

1/4 cup chopped celery

1/2 cup sliced waterchestnuts

1/4 cup mayonaise

1 tsp grated lemon peel

 

Cook ferns or asparagus in a small amount of water until just tender. Drain.

Toss with all the remaining ingredients. Chill. Yield: 4 servings
