Greetings!

 

My name is Allison Nations, thank you for inviting me

to join the group. I always hunger for new recipes

and love chatting about food. I'm new to

vegetarianism (6 months now) and I LOVE it. The

dishes just get more and more creative once you

eliminate the carnage;) I noticed this was an active

group, wonderful...I will add recipes tried and true.

 

I posted one just last night to a couple of other

groups before joining this one. Anyway, I copied it

over to this introduction.

I took a traditional New Orleans style red beans and

rice recipe (basically just beans and sausage) and

modified it quite a bit. You'll never miss that

andouille - trust me.

 

1 zucchini

2 medium onions

1 bell pepper (use red or orange for color)

handful baby carrots

4 cloves garlic (at least) diced

3 stalks celery, chopped

16 oz red beans dried

7 cups water

3 Tbsp at least (or more if ya like it really spicey)

creole seasoning

White rice of choice

 

Put zucchini and next three ingredients in food

processor and puree.

Rinse and sort beans then place in a crock pot. Add

pureed veggies, chopped celery, garlic and water.

Then sprinkle creole spice on top and cook on high for

at least 7 hours.

Serve over a nice bowl of steamed rice...!! Very

yummy. A few diced green onions on top wouldn't hurt

a bit;)

Would be just as nice over brown rice. I like brown rice a

whole lot better than white rice.

 

This is somewhat of a problem in our household, as my

husband won't eat brown rice. So we make both.
