Meuseli Oatmeal Mix

The other day, when chatting with a friend about what we usually eat for

breakfast, I was reminded of this recipe. I rarely desire any cold cereals in

milk for breakfast; most often I crave something warm. Here is a recipe I use

to make my own meuseli. I find it works just as well as the more expensive

store bought kind, and I can play around with the addition of fruits according

to the season or my mood.

 

Meuseli Oatmeal Mix

 

4 cups quick-oats

1/4 cup brown sugar, packed

1-1/4 tsp ground cinnamon

3/4 tsp ground nutmeg

3/4 cup dried fruits: apple pieces, raisins, dried currants, whatever....

 

Combine all ingredients in a large bowl. Stir with a wire whisk until evenly

distributed. Pour into a 5 cup container with a tight-fitting lid. Label and

date

contents. Use within 6 months.

Makes about 5 cups of this mix.

 

To fix a dish of warm mueseli I will take 1/2 cup mix in a bowl and stir in

enough water or soy milk to make it a bit runny (sorry no exact

measurements but I suspect it is close to 1/2 cup). Then, I place the dish in

the microwave and cook on high for 1 minute. Bring it out and stir. Add a

dollop of butter, yogurt, more flavored soy milk, or fresh berries and enjoy.

 

Also, if you want a more crumbly granola type topping, just melt one stick of

butter on a cookie sheet, sprinkle this recipe over it, toss to coat as even as

you can, and then crisp it up in the oven; 350 degrees, stirring a couple of

times. Not sure how to time it as I have always just watched. It will still seem

quite soft when you remove it, but after you let it cool on the pan, it gets

crunchy.

I make muesli too, but I like it cold.

 

I mix mine with plain yogurt, and a sliced banana or a

grated apple and/or some other fruit. I eat this as my

regular breakfast all during the warm weather, but switch to

hot cereals in cold weather.

 

I use regular rolled oats, some toasted wheat germ,

sunflower seeds, and raisins in mine.
