I confess I use real sugar and sometimes sucinot (sp) in place of the sugar substitute, and when I want it to be more hearty I've added some beans (about 2 cups). The beans incorporate quite well, and you can use whatever you happen to have onhand. Cucumber Tomato Salad 2 large cucumbers, diced (peeling optional) 2 large tomatoes, diced 1 medium green pepper, diced 1 medium onion, diced 1 bottle (8oz) fat-free Italian salad dressing Sugar substitute equivalent to 2 tsp sugar In a bowl, combine the cucumber, tomato, onion, and pepper. Combine salad dressing and sugar (or substitute); pour over vegetables. Toss to coat. Refrigerate for at least 1 hour, best if overnight. Serve with slotted spoon.
