I might buy some other berry, o= r whatever I find in the market that looks beguiling; I bet tart apples would= work nicely even. Anyway, it is a vegan recipe that sounded too good to not post here. Let me= know if you try it before I do! *lol* Blueberry Cornmeal Pancakes Makes 12Ê- 4 inch pancakes ÊÊÊ 1ÊcupÊsoy milk 1/2ÊcupÊwater 1ÊcupÊwhole wheat flour 1/2ÊcupÊstone ground cornmeal 1ÊteaspoonÊbaking powder 1/2ÊteaspoonÊbaking soda 1/4ÊteaspoonÊsalt 1ÊcupÊfresh blueberries 2ÊcupsÊcanola oil for frying ÊÊ 1. Preheat oven to 200 degrees F (95 degrees C). 2. In a small bowl combine the soy milk and water. 3. In a large bowl, combine the flour, cornmeal, baking powder, baking soda= and salt. Stir in the soy milk mixture just until combined. Fold in the blueberries and let the batter sit for 5 minutes. 4. Lightly oil a skillet or griddle and heat over medium heat. Pour about 1= /4 cup of batter onto the hot griddle and cook until pancakes are bubbly on to= p and edges are slightly dry looking. Turn an cook until pancakes are browned= .. Transfer to a baking sheet and keep warm in the oven while cooking the remaining batter. Serve warm with syrup or jam. ~*~ NOTE ~*~ The oil frying part of this recipe sounds a bit bleh. When I m= ake this I will use my non-stick griddle, and if I need to, a spritz of cooking= spray. I am not sure why the recipe would require so much oil. 2 cups?
