Guest guest Posted September 24, 2002 Report Share Posted September 24, 2002 I used to have a recipe for making 40 of these at once; to freeze and have on- hand for potlucks, large gatherings, and or making a meal quickly when I am on the run from the law. *jk* However, I seem to have misplaced it; hate it when that happens. I can't for the life of me find the place where I stashed it. *lol* Ah well, here is a smalled-down version. Should work well enough. *s* Spinach Lasagne Rolls 12 uncooked lasagne noodles 1 jar spaghetti sauce (15.5 oz) *I use my own* 1 15oz. carton of ricotta cheese 1 egg 1 (10 oz) pkg frozen spinach, thawed and squeezed 2 cups shredded mozzarella cheese 1/4 cup grated Parmesan cheese 1 tsp salt 1/4 tsp pepper 2 cloves garlic, crushed Cook noodles in boiling water until soft enough to work with. Drain and cool. Mix the remaining ingredients in a bowl. Spread 4 Tbs (approx) mixture on each noodle and roll it up. Pour a bit of spaghetti sauce in bottom of a baking pan and lay lasagne rolls on top. Pour remaining sauce over top. Cover and bake at 350 degrees for 30 minutes, or until hot and bubbly. Optional: sprinkle top with some extra cheese and bake additional 5 minutes to melt.
