Guest guest
This dressing is light and yummy. I had never thought of grating cauliflower before trying this; quite interesting, and adds a good texture to any salad if you have it on hand. 1 cup dry bread crumbs 3 Tbs. butter or marg. 10 cups torn romaine 2 Tbs. grated parmesan cheese 1 Tbs. lemon juice 1 garlic clove, minced 1/4 tsp. salt 1/8 tsp pepper 1-3/4 cups coarsely grated cauliflower In a small skillet brown bread crumbs in butter; set aside. Place romaine in a large salad bowl. In a small bowl combine parmesan cheese, lemon juice, garlic, salt, and pepper. Pour over romaine tossing to coat evenly Top with cauliflower and reserved bread crumbs. Serve immediately. Makes 8-10 servings. ~ P_T ~ The butterfly counts not months but moments, and has time enough. --Rabindranath Tagore
