His idea of a vegetable side dish is mashed potatoes or maybe a dollop of corn! Trying to tame his diet and stuff a few veggies in it has been an egregious challenge for me. Here is a kid-friendly food item that he actually will eat and not notice he is getting healthy stuff. For ease, I sometimes use the pre-shredded cole slaw mix from the store; adds carrots too. 1 lb veggie ground " beef " (I use Yves brand ground round) 1 Tbs. olive oil 1-1/2 cups finely shredded cabbage 1 medium onion, chopped 1 celery rib chopped 1/4 cup green pepper, chopped sloppy- joe seasoning packet ( I use McCormick brand) 1 (6oz.) can tomato paste & water In a skillet, cook veggie-meat, olive oil, cabbage, onion, celery, and green pepper until all the vegetables are soft. Then prepare the rest according to the sloppy-joe packet instructions.
