Quite good served as appetizers or afternoon snacks for the wee bairns; us older kids like them well enough, too. Kind of like McDonald's without all that bleh! *s* 1/2 lb. veggie ground " beef " 1 small onion chopped 1 Tbs olive oil 2-1/2 cups flour 1 Tbs sugar 2 tsp. baking pwdr 1 tsp. salt 3/4 cup ketchup 3/4 cup milk 1/2 cup butter, melted 2 eggs 1 tsp. prepared mustard 2 cups shredded cheddar cheese In a skillet, cook " beef " and onion in olive oil until onion is soft. In a bowl combine flour, sugar, baking pwdr, and salt. In another bowl combine the ketchup. milk, butter, eggs, and mustard; stir into dry ingredients until just blended. Fold in " beef " mixture and cheese. Fill greased mini-muffin cups 3/ 4 full. Bake at 425 degrees for 15-18 minutes. Yeild: 5 dozen mini-muffins You can make them in regular sized muffin cups. Makes 2 dozen, and you need to cook them for 20-25 minutes. ~ P_T ~ Science is not a sacred cow. Science is a horse. Don't worship it.
