My s-i-l taught me to put a whole carrot in your simmering sauce. She claims it cuts the acid taste in the tomatoes. I am not sure how this works or why, but I do it now out of habit, and with good results. After cooking the sauce I discard the carrot. Feel free to post or add any of your speghetti sauce making tips to this.
