My wife uses a Lipton's Onion soup base to make a wonderful long-simmer stew. Just chunk in potatoes, carrots, onions, toss in a bag of frozen mixed vegetables, and as an option chunk in a few veggie burgers of your favorite variety, then let it simmer all afternoon. It's ready to go when you are, and is delicious. Bring home a baguette for an extra treat. Simple and quick. We also use a Presto brand electric pot, which is perfect for making delicious, filling soups, too. For example, try the Frontier Soups brand dry soup mixes. They're sold in Wild Oats stores, and elsewhere, and come in clear plastic bags. You just add water, and simmer. They come out rich, thick, and delicious, and you can of course add some things if you'd like. Their Minestrone is wonderful, they make several great bean soups, and their corn chowder is superb. Another all-afternoon meal we make to ease our busy schedule is chili, of course. It's especially delicious when made with Morningstar Farms Sausage Crumblies in place of ground meat. Mmm.. Another thing we do SOMETIMES is cook ahead, and freeze meals in either plastic containers that can be waved, or in plastic bags. Works well, but you have to put in a good day of preparation to stockpile for the week, especially when you have three growing boys.
