Guest guest Posted September 10, 2002 Report Share Posted September 10, 2002 Hi, Sherri, Yes, unfortunately many of us experiment with vegetarianism in our enthusiastic youth and end up rather regretting it. It can be done incorrectly. One thing my family, which is lacto-ovo vegetarian except for my Vegan eldest son, is to take chewable children's vitamins each day. This supplements on the theory that it doesn't hurt and will catch any gaps we may leave, now and then, in our busy lives. To get your proteins is easy these days. There are even iron-supplemented food products for vegetarians who have that challenge. The general rule of thumb is simply to eat some grains, legumes, and nuts each day. Doesn't have to be any special ratio or amount, either. Grazing does it. Being a healthy Vegan is a bit more challenging, but also not so bad, really, once you read up on it and understand what's going on. I don't think protein should really be an issue as long as you concentrate on getting a variety of foods in your diet. However, if you feel you need more iron may I suggest the simplest of all solutions: cook using a cast iron skillet. Small amounts of iron from the skillet will fortify your food. In fact, this is why some people say raisins have a high iron content--they used to be dried in the sun on large sheets of iron. When I went veggie my mother really used to worry about my iron intake. We both used to work at a blood bank and she would prick my finger and test my blood once a week! Can you imagine?
