----- Forwarded Message ----- The Daily Raw Inspiration from Jinjee at TheGardenDiet.com infoSent: Tuesday, March 10, 2009 4:15:30 PMThe Daily Raw Inspiration - 3/10/09 Jinjee's Raw Chickpea Pilaf RecipeJinjee's Raw Chickpea Pilaf Recipe: This delicious meal is quick to prepare and packs a high energy protein punch! - Soak two cups of chickpeas (garbanzo beans) in spring water the day before making this so that they soak for 24 hours. You can buy organic chickpeas in the bulk bins at most health food stores, or packaged in bags at almost any supermarket.- Drain and rinse then grind up the soaked chickpeas in a food processor or blender until they are like tiny flakes. This is similar

to a rice dish because the chickpeas will now be able to absorb the flavors of the spices you will be using. If you process or blend them too much they will turn into humus, a paté-textured dish which is also nice, but another recipe entirely. (if you do accidentally turn this into a paste, just add two tablespoons of lemon juice, two tablespoons of olive oil, salt, and enjoy your humus!) - Put these ground chickpea flakes in a bowl. Add 2 tablespoons of olive oil and salt to taste. Add a teaspoon of mexican seasonings. (You can also add spices like oregano, paprika, fajita seasonings, curry, or italian seasonings to make a different flavored dish each time you make this). A squeeze of lemon on this recipe can also add a nice flavor!- I usually add a chopped avocado and stir that in. I sometimes add finely chopped leeks or fresh herbs such as chives or dill. Flax oil can also be very nice with this recipe instead of olive oil.
