First of all, make sure to prepare something that YOU would like to have. As for your guests, by all means don't go all out spending too much money trying to be impressive. Keep it simple and make them beg for more. I found a few things that work very well.

1. Make a good amount of guacamole, salsa or onion dip (cashews, water, onion, seasalt, fresh herbs: parsley, chive or dill and maybe a little cayenne pepper. Blend well in high speed blender) and serve with organic blue chips or crudite's.

2. Make a large COLORFUL salad with toppings that the average person would not top with. (do not use iceburg lettuce)

3. Make a large COLORFUL fruit salad (with fruit that will be easy to chew, I usually leave out apples). Use berries, pineapple, banana, grapes and kiwi. Then make a raw tahini sauce with lemon or orange juice, sea salt and minced garlic.

Hope this is helpful.

Any one have any really good vegan recipes they have used where there are a lot of conventional food eaters they would be willing to share?

Thanks!

Kim
