As for your guests, by all means don't go all out spending too much money trying to be impressive. Keep it simple and make them beg for more. I found a few things that work very well. 1. Make a good amount of guacamole, salsa or onion dip (cashews, water, onion, seasalt, fresh herbs: parsley, chive or dill and maybe a little cayenne pepper. Blend well in high speed blender) and serve with organic blue chips or crudite's. 2. Make a large COLORFUL salad with toppings that the average person would not top with. (do not use iceburg lettuce) 3. Make a large COLORFUL fruit salad (with fruit that will be easy to chew, I usually leave out apples). Use berries, pineapple, banana, grapes and kiwi. Then make a raw tahini sauce with lemon or orange juice, sea salt and minced garlic. Hope this is helpful.
