For example, we store many fat-soluble nutrients, such as vitamins A, D, E, K, but we do not store vitamin C, which is water soluble. (Interestingly, we eat C and make D. Cats eat D and make C. Anyway ... We store B12, and we utilize only a few micrograms (millions of a gram) daily. This is part of Nature's design for our species, that we may survive intact through famines and other experiences that Nature sometimes creates. So yes, it can take many years for a "deficiency" to show up in the form of symptoms. However, if we simply eat and live well, we should never have such a problem. For years, the commercial food industry funded studies that purported to show that foods grown commercially and organically contained the same general nutrient values. But now, longer-term studies are beginning to show what many of us knew MUST be true ... that over time, organic farming improves soil quality (if for no other reason than by allowing organisms to live). Now we are beginning to see strong evidence that the soil is indeed superior, and therefore that the plants and foods we receive therefrom are quite a bit superior. And this variance can only expand over time, for the conventional farmers continue to damage their soil, and the organic farmers continue to improve theirs (as a generalization, of course). Regarding garlic, onion, and spicy vegetation, I regard these as nonfoods for our species. Many extol their virtues, because they possess this or that antibacterial or antifungal property and the like. But when we create health, genuine health, from the inside, out, then we easily let go of our attachment to all these treatments, we leave behind ALL medical model thinking, and we embrace an entirely new understanding of Nature's design and of cause-and-effect relationships.
