It is excellent served sauteed or fried, or breaded with cornmeal and deep-fried; it can be steamed, baked, stewed or pickled, it can even be eaten raw. When cut, okra pods exude their thick, slick juice that makes them an ideal thickener for soups and stews. Paula Wolfert makes this note about ridding okra of its sliminess: "One thing Mediterranean cooks agree on is the use of a very sharp small knife to peel away the thin ring between cone and pod as well as the cone and cone tip without piercing the pod itself. When you do this, none of the interior gluey substance gets released. A second tip: whenever you wash okra, dry it immediately." If the flavor and texture don't win you over, think of okra as a serious health food. The mucilaginous fiber that creates okra's signature sliminess stabilizes blood sugar levels, and it also helps bind and eliminate excess cholesterol and toxins from the body. Other names for okra include lady's finger, bhindi and gumbo. The name "okra" comes from "o'ku'ru" in Igbo, a language spoken in what is now Nigeria. In various Bantu languages, okra is called "kingombo", and this is the origin of its name in Portuguese, Spanish and French and in turn the Southern U.S.staple, gumbo. >> Gather Your Okra...
