Guest guest Posted July 18, 2007 Report Share Posted July 18, 2007 Hello, I am a newbie to the Vegan diet and I long to be a 100% Raw Vegan. I have been reading a lot and learning a great deal. I ordered two new books to help me get started. At this point I am not sure what I should be eating in one day to have a balanced diet. My biggest concern is rice and grain stuff. Is there anything to replace hot rice, or do you just it the rice soaked in water? How can I make sure I am getting the proper amount of grains in a day, and where can I buy grain foods? I have seen grain products, but I have no idea what I should get. I do know I would like to start juicing too, so it would be great if someone could recommend something good for shakes, and eating plain. Guest guest Posted July 18, 2007 Report Share Posted July 18, 2007 You don't need any grains. The one thing I did for a long time that helped me transition is Oat Groat cereal. Victoria Boutnenko has a good recipe for that and below is my version. You can eat raw corn if you want or sprout Kamut or other sproutable grains. You want to make sure you are getting enough calories. Most people don't realize how concentrated cooked food is and when they go raw they don't eat enough. You want to have plenty of fruit (an example of my breakfast is 1/2 a large meridol papaya, 2 bananas and 1/2 pint of blueberries). Making green smoothies and vegetable juices also fill you up with nutrients. Make sure you have at least one BIG dinner plate size salad with lots of leaf lettuces, and loaded with things like tomatoes, cucumbers, peppers, squash, avocado, etc. You want to get some (but not lots) of healthy fat each day such as 1/2 an avocado, 1/2 cup or so of raw nuts or seeds, some raw olives, etc. Make a plan for each day - this helps you stay on track. Always have something you can nibble on (apple, nuts) so you can make the healthy choice. Be proud to be different and loving yourself enough to eat right! Nancy OAT GROAT CEREAL The night before, put 1/3 to ½ cup steel cut oats in container and pour water over to cover the oats by about an inch. (If forget to soak, you can still make it , just blend longer) In the morning. pour any remaining water into a measuring cup and add water (warm if desired) to make about 2/3 cup water (depending on how thick you like it). Put oats and water into the blender. Add 3 pitted dates and a pinch of sea salt. Blend on high for several minutes (the longer, the warmer it gets). Pour into a bowl and add raisins or other fresh fruit. Variation: add in ½ a peeled and sliced sweet apple and a dash of cinnamon with the rest and blend. add 1 or 2 Tbsp of raw cashews with 1/3 cup of oats to soak.
