Some are 'water-core' which shows up as glassy/watery tissue near the core rather than opaque like it normally is. It is a sign of maturity (or over-maturity, depending on who you talk to) and is not often seen in commercially produced fruit because water core apples do not store as long so producers make sure fruit is harvested before it reaches that stage. Water core apples are almost always sweeter and the condition does not diminish nutritional value. I've been peeling them, putting them through my juicer and then combining the pulp and juice together to make a really fabulous totally natural applesauce. This works best with apples that are sweet! I'd be willing to part with half of what I have at $1/lb. I also have 10-20 pounds of unshelled organic walnuts I harvested in northern California two years ago that have been in refrigeration. Some are good and some are a bit rancid, but they make good squirrel food. Free for the taking if anyone would like them. I don't like to lure squirrels to my house because of my cat.
