Guest guest Posted October 19, 2006 Report Share Posted October 19, 2006 My daughter made this yesterday. Its from the Real World, Real Raw or something like that. Its too good unfortunately. Its already gone. Chewy Chocolate Freezer Fudge makes about 64 1 " square pieces, about 3/4 " thick 2 c. raw almond butter (one 16oz. jar) 1/4 cup cocoa pwdr., or raw carob pwdr, sifted to remove lumps 1/2 cup plus 2 T. maple syrup (could use stevia, i suppose) 1 heaping T. coconut butter 2 t. vanilla extract (could use van. bean) 1 t. coarse sea salt In a large bowl, combine all the ingredients, stirring well. You can also use a standing mixer w/the paddle attachmt., but its more fun to do by hand. Spoon the mixture into little candy molds, flatten w/a spoon, and cover w/parchmt. or wax paper. Or line a square baking pan w/parchmt. or plastic. Place the fudge into the pan and cover the surface w/parchmt. or wax paper, pressing down evenly to flatten. Place in the freezer to chill. If using the pan, remove from the freezer after an hr. or so, flip it out of the pan onto a flat surface and cut into squares. These should be stored, covered, in the freezer (otherwise they will get too soft and mushy) where they would keep quite well for a long time if they didn't always get eaten so fast.
