" When a label says " raw " it just means the product has not been cooked, it doesn't necessarily mean that it hasn't been heated incidentally in processing. All commercial nuts have to be dried before they are packaged, otherwise they would mold in the packaging. This can be accomplished quite effectively and naturally if they were allowed to lie on the ground for a few weeks after they fall, but on modern farms where getting the product to market quickly is the goal, nuts are gathered prematurely and are shaken and tumble-dried in large dryers. Somewhere, somebody has probably done some research about the temps that are used, but it's easy to imagine it being at least 140. Nuts that are sold out of the shell are even more problematic because not only are they subjected to the same process, but the missing shell causes them to dry out even more, lose nutrients and become rancid. Still and all, I ate lots of store-bought nuts in my transition, shelled and unshelled, and still do from time to time. Incidental heating doesn't destroy nuts nearly as much as roasting or deliberate cooking, and the truly raw nuts that are available through the likes of NFL are prohibitively expensive, imo. Guest guest Posted November 5, 2006 Report Share Posted November 5, 2006 I know this was a long time ago...takes me a while to get thru email...You can tell if the nuts are viable or not simply by soaking them overnight, rinsing and draining them. The taste will tell you if they have come alive or not, also if they keep OK in the refrig. after that or not, is a clue. I like to purchase a few and test them if I am not sure, and then go back and stock up if they are good.
