Hi There - good question - Green 4 Life is an excellent resource.

One of my recipes is published in that book. Also while transitioning to raw,

nuts and seeds - soaked and sprouted, dehydrated, ground into flours,

blended into mylks are protein rich, a raw foods 101 class could help -
