ingredients guidelines for raw cuisine and potllucks?

Can extracts be used? I just bought some organic almond and

peppermint extracts and then started wondering if that would make my

preperations no longer 100% raw. I'm planning on attending my first

raw potluck this coming Sunday and want to know if what I bring needs

to be 100% raw and 100% organic. I find some organic items either too

hard to find or too expensive to afford, e.g., coconut, pineapple, and

dates. BTW, I live in Lynnwood and shop at mostly Trader Joe's, Top

Foods, and Ranch Market. (I plan to check out Central Market soon).

Some extracts are preserved in alcohol. If it is an essential oil, it may not

be so preserved. If there is no alcohol listed in the ingredients, it would

depend upon whether the oil is extracted by a cold process or by heat.

You'd have to talk to the manufacturer, unless there is someone here in

the group familiar with how essential oils are made.

As far as organic and non-organic, it depends upon what the fruit is and

where it comes from. Some fruits have more pesticides used on them

than others. Sometimes (more the exception than the rule) fruit not

labeled as organic is just not certified because the grower doesn't have the

money to get certified organic. Some people will only eat organic foods,

but others will eat both, but be sure to label what is not organic in your

dish.

My understanding is that strawberries tend to be top lists in this

regard, and personally only buy them organic.
