I'm trying to transition to a raw diet, but I haven't been able to find any recipes on the internet for these kind of cherries. I'm up for making almost anything that fits the raw lifestyle ... drinks, smoothies, deserts, salads. I don't own a dehydrator yet ... but I have a Vitamix and a good food processor. My oven does operate at as low as 100 degrees F and we're in for a mess of sunshine -- so if given the instructions on how to dry without specialized equipment, I'd give it a shot also. If it were me, to sweeten them up, I would pit them and puree them with mango and maybe pineapple (and maybe fresh blueberries, because those will help the filling to hold together and firm up), before pouring them into a pie crust made of walnuts and some dates mixed together in a food processor. I might add some cinnamon to the crust and a pinch of Celtic salt. And maybe some orange zest.
