We've been wanting to do something with olives for a long time, but availability of affordable raw olives has been a challenge. We've finally settled on a recipe that uses raw kalamata olives that we can sell for the same price as our other flavors. These olives are from Greece and are not pasteurized or heated in any way during their curing. However, they are packed in a brine that contains wine vinegar which we believe is not raw. Except for the olives, the recipe is the same as our " Original " hummus recipe, minus the parsley. Given that there are many degrees of purity in a raw diet, we're hoping that a product with only a tiny fraction of calories that have been pasteurized will be appealing to our customers. Considered in the context of the very high quality of these olives and the richness of minerals and vitamins that they provide, we feel that this recipe could be a good choice. Of course not. We have long accepted email regarding raw restaurants, raw classes, and raw food products. This information can be helpful to raw foodists on this list. We just do not want to be overwhelmed by advertising. The general rule for raw classes is one post well in advance of the class, then one within a week of the class. (That is primarily for Seattle area classes and events, though we allow for posting of larger national and international raw food events.) Our local raw restaurant, Chaco Canyon occasionally posts menu changes or special dinners. The restaurant is frequented by many of our members and their posts are infrequent. Regarding the products, I certainly do not want repeated emails regarding the same product, but announcing a new flavor or new product is fine. I just request they be short. When the information is extensive, then the email should be brief with a link to the information on the web. I don't recall where else their products are sold locally. Madison Market (Central Coop) probably has the widest selection of raw foods available in a retail store in Seattle (other than just produce, that is.)
