SmartMonkey Foods endorsing a Raw Food City Council Candidate!! Join us in supporting Chris Iverson, a Raw Fooder who’s running for Portland City Council!! It’s delicious, and full of probiotics, promoting healthy intestinal flora. Portabella Mushroom Steak: 4 Portabella mushrooms ¼ cup olive oil ¼ cup nama shoyu (raw soy sauce) 1 Tablespoon rosemary Wipe mushrooms clean with damp cloth. Remove stems and set aside. Place mushrooms in a bowl and marinate 8 hours in olive oil, nama shoyu and rosemary. Mushroom Gravy: Portabella mushroom stems, from above ¼ lb mushrooms, any type (shitake, white, crimini), chop ½ stalk celery, chop 1 pinch black pepper 1/4 cup oil 1 T apple cider vinegar ½ clove garlic, to taste ½ teaspoon salt, to taste ½ cup water, as needed Set aside half of the chopped mushrooms and celery. Blend remaining ingredients into a gravy, pour into bowl, and stir in chopped celery and mushrooms. Serve by placing thick slices of Marinated Portabella steak onto plates and drizzling Mushroom Gravy over it. You’ll love this savory ‘steak’! .................................................................................\ ...... 4. recipe: Coconut Cream Pie with Carob Fudge on Brownie Crust Makes 1 pie This recipe’s inspired by our friend Justin, who throws some of the best Drum & Bass parties in town. He understands it’s the living foods lifestyle and diet that keeps us up and dancing energetically for hours! Pie Crust: 1/4 cup dry shredded coconut 12 SmartMonkey Foods Carob Brownie Bites Dust bottom of pie pan with shredded coconut. Press 12 Carob Brownie Bites into the bottom of pan to form the pie crust, set aside. Carob Fudge: 10 oz pitted dates 1/2 cup raw carob powder 1/2 cup extra virgin cold pressed olive oil Blend all ingredients until smooth, adding a splash of water only if needed. Layer half of this fudge onto Carob Brownie crust, saving half for top of pie. Coconut Cream: 3 Thai baby coconuts 4 oz dates, pitted 1 cup water from coconut, as needed Blend all ingredients until smooth, adding coconut water only as needed. Layer coconut cream onto Carob Fudge and pie crust. Frost top of Coconut Cream with remaining fudge using cake decorating tip and frosting bag, or just drizzle it across top of pie like frosting. A yummy guilt-free dessert packed full of electrolytes from coconuts. Carob is a legume, provides protein, and is free of caffeine (unlike chocolate).
