Just back from Living Light Culinary Arts Institute

A fabulous experience! I was there for a month taking their entire

series of Oct./Nov. classes: FUNdamentals of Raw Living Food,

Essentials of Raw Culinary Arts, Chef & Instructor Training,

Catering, & Elegant Entertaining.

 

Since the FUNdamentals class is coming to Seattle, Sun. Dec. 4th at

Bastyr, I thought I'd say a few words about that for people who are

considering attending:

 

This class is a very ambitious undertaking where there's a food demo

every 15 or 20 minutes. They cover a LOT of material, including

sprouting, rejuvelac, soups, smoothies, cheese making, knife skills,

desserts. And you get to eat EVERYTHING they make, so there's a ton

of food. When I took the class at Living Light, we had 5 " feedings "

in this class: breakfast, mid-morning snack, lunch, afternoon snack

& dinner. NO one went hungry! In the Bastyr class, they're serving

a buffet lunch & providing samples of all foods prepared in class,

so there will be a lot of food in this class as well. If anyone's

considering going on for more Living Light education, such as the

hands-on Essentials and Chef classes, this class is the

prerequisite. So you can save money by taking it here instead of

Fort Bragg, where you'd incur hotel expenses. Sure I could have

learned all this stuff from books--eventually, but this greatly sped

up my learning curve, being able see how things are done such as

pizza crackers & being able to taste a lot of foods to see what I

liked best.

 

Alicia Ojeda, Living Light's Executive Chef who teaches the class,

is one of the most competent & energetic individuals I've

encountered in any profession + has extraordinary people skills.

She has a wealth of experience first in mainstream food & then raw

vegan cuisine. I've learned a tremendous amount from Alicia, both

in the classroom & working with her in the kitchen.

 

BTW, if you find the $299 price too steep for your budget, Alicia

provides some scholarship opportunities for people who want to

donate some of their time to prepping for & assisting the class.
