They are so moist I'm not sure how long they will keep in a plastic bag. I prefer the dry Death Valley dates but don't have a source for them. It is possible to have very moist fresh raw dates too. Some have suggested that the skins of steamed dates take on a shiny look. If you have a concern about them, you can ask the store or grower if they have been heated/steamed. You can keep them in the frig for a while or freezer for a much longer time, but dehydrating them would give you more flexibility and would reduce the likelihood they would grow mold or bacteria, especially if you wish to keep them at room temperature.
