The short answer is: Brix level in some juice indicates the percentage of soluble solids in the juice. I use a refractometer, small hand held optical device to check the brix level by putting a drop of the juice on the plate. I'm also fowarding William K's post on another list to give a short summery about brix. http://www.daily-mfg.com/news/healthcapssummer2005.htm#sugars The article contains good info on the sugar-mineral connection, the power and value of owning a refractometer for choosing foods, and has a Brix chart.
