brix question

Audrey,

 

Questions about brix has been asked many times on the list so I'll

answer here just in case others may be interested. The short answer is:

Brix level in some juice indicates the percentage of soluble solids in

the juice. I use a refractometer, small hand held optical device to

check the brix level by putting a drop of the juice on the plate.

 

I'm also fowarding William K's post on another list to give a short

summery about brix.

The article contains good info on the sugar-mineral connection, the

power and value of owning a refractometer for choosing foods, and has

a Brix chart. To me, it seems like a good summary -- but I'd be

interested in others' evaluation.
