Guest guest Posted June 28, 2005 Report Share Posted June 28, 2005 Hi Everyone, I was wondering if anyone has any suggestions. I will be traveling by train back east at the end of Aug. I will not eat Amtrak food. I would like to find out some ideas on what I can take/make that will hold up for a couple days with out refrigeration & be a somewhat complete meal.I would like to travel lite. Fasting right now isn't much of an option, as I do not want my first " real " fast to be while traveling...don't know what to expect. Guest guest Posted June 30, 2005 Report Share Posted June 30, 2005 Helen, Dried fruit, nuts and seeds would keep the whole way. The first day you could eat up any ripe and juicy fruit. Fresh fruit that is drier, such as bananas, and avocadoes, if a little green, could ripen on the way. Hard vegetables, such as carrots, along with greens kept moist should hold up for a couple of days.
