Shari,

You could use a recipe I created to use for vegan garlic bread. It is

raw (prior to baking).

I'd have to research my recipe, but this is approximate:

1/2 cup [raw] olive oil

1 bulb (yes bulb... I like garlic!!!)

1/8 to 1/4 teaspoon sea salt (to taste)

optional:

fresh parsley, cilantro, or other herbs

Clean up the garlic: Break up the garlic bulb, removing the skins

from the cloves. Blend up all the ingredients. A small 1-cup blender

attachment (aka 1-cup mini-jar) works well for this (for standard

household blenders. http://thenaughtyvegan.com/kitchen.htm)

For a thicker consistency, try substituting some or all of the olive

oil with (melted) coconut oil. Once blended, allow the mix to firm up

in the frig.

The raw version might be best with less garlic. It depends on how

thick you spread the garlic butter!

I haven't used it since being raw (but have thought about it!) Let me

know what you think!

You might also like to try substituting a flax-borage oil combo for the

olive or coconut oil, as flax-borage oil tastes like butter.
